Breakfast lunch or dinner. The plant-based diet can be as easy as it is tasty. This is one of our favourite weekend foods, it makes a great brunch and honestly takes no longer to make than a bowl of porridge or frying up some eggs. We introduce you to smashed avocado on toast. Hold your reservations, this recipe is packed with mouth-watering flavour.

If you want a feel-good about-yourself meal too, this is the one to start your day on. Honestly go and google the health benefits of avocados. They are nothing short of a superfood. They’re full of vitamins, antioxidants, good fats, and more potassium than bananas.

The flip side is that they are not the most environmentally friendly products, they are susceptible to being the crop of mono-culture farms, and so many people let them over-ripen and go to waste. The good news is, you can buy responsibly sourced avocados, and then simply make sure you use them instead of them finding their way into the trash. And if you do have some spare you can always make some vegan quesadillas.

Avocado Toast Ingredients

4 slices of sourdough bread

2 large avocados

1 sprig of fresh cilantro

1 tsp of minced garlic

1/2 a white onion

1 lime

Ground salt and pepper (season to taste)

1 salad tomato

Sriracha (to taste)

Vegan margarine

Avocado Toast Recipe

When your avocados are ripe, grab yourself a bowl, it’s smashing time. Scoop out all that good green stuff, pick up a fork and just give them a quick fluff up, but don’t go mad just yet, we will add some seasoning first.

Into the bowl with your lightly mashed avos, squeeze in your lime juice, throw half a white onion finely diced, add a teaspoon of minced garlic, crack in some salt and pepper and then we can combine everything. Pick your fork back up, and choose your desired consistency, if you want some avocado chunks then take it easy, but if you prefer a smoother smashed avo then keep working it until you’re happy.

Lightly toast your chosen sourdough bread, spread on some vegan margarine while the bread is still warm and scoop on your smashed avo mix. Finally, chop up a tomato into small squares, and mix with 3-4 chopped cilantro leaves. Finish this green cuisine with the tomato topping and then sprinkle on as much or as little sriracha as you can handle over everything. You are finished. Knife, fork, enjoy!

Ingredients
  

  • 4 slices of sourdough bread
  • 2 large avocados
  • 1 sprig of fresh cilantro
  • 1 tsp of minced garlic
  • 1/2 white onion
  • 1 lime
  • ground salt and pepper to taste
  • 1 salad tomato
  • Sriracha season to taste
  • Vegan margarine

Instructions
 

  • Scoop out the avocado flesh into a bowl and break it down into small chunks with a fork, just wait to get your final consistency until more ingredients are added
  • For a small lime squeeze in all the juice, for a larger lime start with half and you can add more if you want some extra tang later
  • Add the half a white onion, finely diced, into the bowl
  • Add a teaspoon of minced garlic
  • Crack in a few cracks of salt and pepper, or adjust to your taste
  • Now combine all the ingredients in the bowl to the consistency you want, smooth or still with avo chunks
  • Lightly toast the sourdough bread and then spread on some vegan margarine while it is still warm
  • Top with one diced tomato mixed with chopped cilantro leaves, then sprinkle on as much, or as little sriracha sauce as you would like
