2 1/2 cups cornflakes

200 g vegan dark chocolate chips

1 Tbsp golden syrup

How to Make Vegan Cornflake Cakes

So to make some deliciously rich and crunchy cornflake cakes, you should start by measuring out 200 g of vegan dark chocolate chips, and then pour them into a large glass mixing bowl.

Having the right sized mixing bowl and saucepan to boil water in matters. Choose a saucepan large enough so that if it’s a third full of water, the bowl can sit above, but not in the water. This way the water can bubble beneath the bowl but not spill up out the sides.

Now you should set the pan of water over high heat and bring the water to a boil, then turn it down to a gentle bubbling simmer. Place the bowl of chocolate chips onto the saucepan of simmering water and occasionally stir the chocolate until it is completely melted and smooth.

Add 1 tablespoon of golden syrup to the melted chocolate and stir thoroughly until you can’t see any of the clear syrup anymore and you just have a bowl of thick delicious chocolate and syrup to coat your some crispy flakes with.

Keeping the water warm over a low heat and the bowl of chocolate still on the saucepan so that the chocolate doesn’t set while you’re adding the flakes. Tip in the 2 1/2 cups of cornflakes and turn them over slowly in the liquid chocolate. Do this gently to avoid turning all the cornflakes into crumbs, and to completely coat every flake.

Finally, distribute the mixture into 6 cupcake cups, pouring a large spoonful of sticky, chocolate flakes at a time, and then make sure allow the chocolate to set before eating them. You can leave them at room temperature to set or place them in the fridge.
