Strawberry and Cornflake Jelly Parfait

This parfait is a lovely, light dessert that combines the fruity flavor of strawberries with the crunch of cornflakes, all held together by the refreshing agar-agar jelly.

We gave ChatGPT 3 ingredients: cornflakes, strawberries and agar-agar and it gave us a recipe for this tasty strawberry and cornflake jelly parfait!

We had never used Agar Agar before this recipe. A pack of it has been sitting in our cupboard for months and we don’t know why we bought it. So we thought that we would chuck it into the cleverness that is ChatGPT with a couple of other ingredients and see what it spits out this time. And the results we’re pretty good, at first it’s like making a jam and then you take a hard left turn and it becomes a jelly, and it tastes great.

You hardly need any equipment to make this dessert, just a chopping board a sharp knife, a stove, a saucepan and a fridge. And a glass as well so that you have something to build your parfait up into.

The prep time for this dish is almost zero, just chop some strawberries. Then a little bit of love and care for around 8 minutes while you stir and boil everything on the stove. But then its feet up and let the refrigerator do its thing for a couple of hours while the parfait sets. So we’re only talking about 10 minutes hands-on time and the rest is the agar agar jelly setting.

There are all sorts of flavours and textures going on with this dish from the soft and sweet fruits to the refreshing jelly and the crunch and chew of the syrup-coated cereal. I think this little dessert could be elevated though by adding a layer of cream and then topping that off with some crunch.

This is a really fun meal though, probably better to enjoy it while the weather is still good. Not sure that a parfait makes the perfect winter warmer, but in the sunny months this is a great easy sweet treat that anyone can enjoy. We haven’t made it with our family yet, we’re pretty sure the little ones would love it.

Equipment

  • 1 Medium Saucepan
  • 1 Refrigerator
  • 1 Sharp knife
  • 1 Chopping board

Ingredients
  

  • 1 cup fresh strawberries chopped
  • 1/4 cup sugar adjust to taste
  • 1/2 tsp agar-agar powder
  • 1/2 cup water
  • 1 cup cornflakes
  • 1/4 cup honey or any sweet syrup

Instructions
 

Prepare the strawberry jelly

  • In a saucepan, combine the chopped strawberries and sugar. Cook over medium heat until the strawberries release their juice and soften (about 5 minutes).
  • In a small bowl, dissolve the agar-agar powder in 1/2 cup of water.
  • Add the agar-agar mixture to the strawberries and bring to a boil, stirring constantly. Reduce the heat and simmer for 2-3 minutes until the agar-agar is fully dissolved.
  • Remove from heat and let it cool slightly before pouring into individual serving glasses or a shallow dish. Refrigerate until set (about 1-2 hours).

Prepare the cornflake layer

  • While the jelly is setting, mix the cornflakes with honey or syrup if you prefer a sweeter layer. This step is optional, as plain cornflakes also work well for a crunchier texture.

Assemble the parfait

  • Once the strawberry jelly has set, remove it from the fridge.
  • Top the jelly with a layer of cornflakes.
  • Garnish with a few fresh strawberry slices and mint leaves if desired.

Serve

  • Serve immediately to enjoy the crunchy texture of the cornflakes alongside the smooth strawberry jelly.
