We gave ChatGPT 3 ingredients: samphire, pickles and breadcrumbs and it gave us a recipe for these deliciously tangy crispy samphire and pickle fritters, and it works!

We had to add a little more flour to the recipe than ChatGPT suggested, but as soon as we did we could roll the veggie-filled batter and easily coat it in breadcrumbs.
You don’t need much equipment to make this dish, just a chopping board and a sharp knife, a stove top and a medium-sized frying pan.
It only takes 5 minutes to prepare and 6 minutes to cook these tasty fritters and they make a perfect side dish.
They have an almost seafood-like saltiness to them thanks to the samphire, and a tangy vinegar boost from the pickles, all in a crispy coated, gooey-centred fried batter.
A perfect side dish all year round, and our entire family loved them, from our 1-year-old to of course, us!
Crispy Samphire and Pickle Fritters

- 1 Medium Frying Pan
Ingredients
- 1 cup samphire chopped
- 1/2 cup pickles e.g., gherkins or dill pickles, finely chopped
- 1 cup breadcrumbs use panko for extra crunch
- 1/2 cup flour all-purpose or chickpea flour for a gluten-free option
- 1/2 cup plant-based milk such as almond, soy, or oat milk
- 1 clove garlic minced
- 1 tbsp fresh herbs like dill or parsley, chopped
- Salt and pepper to taste
- Oil for frying vegetable or sunflower oil works well
Instructions
- In a mixing bowl, combine the flour, plant-based milk, minced garlic, chopped herbs, salt, and pepper. Stir until smooth and well-mixed. Start with a 1/4 cup of flour.
- Add the chopped samphire and pickles to the batter, mixing to coat the ingredients evenly. Add another 1/8 cup of flour at a time until the batter stays together and you can spoon it into the breadcrumbs.
- Place the breadcrumbs in a shallow dish. You can season them with a bit of salt, pepper, and any other herbs or spices you like.
- Take small spoonfuls of the samphire and pickle mixture, and shape them into small patties or fritters.
- Coat each fritter in the breadcrumbs, pressing lightly to ensure they stick.
- Heat a generous amount of oil in a frying pan over medium heat.
- Once the oil is hot, carefully add the fritters to the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and drain on paper towels to remove excess oil.
- Serve the crispy samphire and pickle fritters warm, with a side of vegan mayo or a tangy dipping sauce.
